"Born from a remarkable collective adventure, TWELVE is rooted in the heart of the Aubrac plateau, in Laguiole (Aveyron). In 2013–2014, twelve friends—hence the name “Twelve”—passionate about whisky, decided to bring a dream to life: creating a 100% French whisky from their own terroir.
 
 
The choice of location is symbolic: the distillery is housed in the village’s former presbytery, perched 1,000 meters above sea level. The site, a listed historic building, presented a challenge: “the village center is registered in the inventory of historic monuments,” the distillery notes.
 
 
Twelve’s whisky reflects its truly French terroir: local barley, Aubrac spring water, and carefully selected cask maturation. The house emphasizes artisanal production in limited editions, highlighting the uniqueness of the place and its climate.
 
 
This peated single malt is made by blending casks that previously held Pineau des Charentes. Maturation in the distillery’s dry warehouse adds character, while transfer to a humid warehouse imparts finesse and reveals a discreet yet elegant peat.
 
 
Bottled by gravity, unfiltered and without coloring, it is reduced slowly over several months to 48% ABV.
 
 
Tasting Notes: The nose opens with rancio, almond paste, and dried fruit, followed by leather and smoke intertwined with subtle peat fragrances.
 
 
On the palate, the attack is direct; Azurite is long and full-bodied, with dried fruit flavors melding with elegant peat, finishing on ashy notes."
