  • "Salers is the oldest gentian liqueur in the Massif Central. It is distilled in Turenne with gentians from Auvergne. The name on the labels is "Salers Gentiane", but the common designation is "la Salers". It is one of the so-called bitter liqueurs.
  • The gentian roots are washed and crushed, before being macerated in alcohol for several weeks.
  • After drawing off the infusion, that is to say the juice from the maceration, the roots are placed in copper stills in a bain-marie to be distilled.
  • The distillate thus obtained is mixed with the initial maceration and a subtle bouquet of spices and aromatics before being placed in Limousin oak barrels where it will mature for more than 3 years. Finally, the last phase: balancing the product. The distiller incorporates water, neutral alcohol and a little sugar to obtain the alcoholic strength of 16%, 20% or 25%. Salers gentian is not a fermented drink and is faithful to the original recipe based on superfine alcohol."
