- "The Saint Julien D'Aille estate (labeled Organic Agriculture) is a very old wine-growing business. A monastic estate before the Revolution, it was owned by the Pasteur Institute for over half a century. Entirely restored by Bernard Fleury, who acquired it in 1999, it covers 80 ha. The name of the estate associates the Aille, a small river in the Plaine des Maures, and Saint Julien, a Roman centurion martyr in the 4th century. Saint-Julien lived in the 3rd century AD. Against the advice of the Roman authorities, this centurion converted to Christianity in 304 and deserted the army. Arrested, he was put to death and beheaded. The rebellion of this martyr against the all-powerful Rome would arouse immense fervor throughout the Empire. In Gaul, more than 300 chapels would be erected in memory of Saint-Julien. In 1095, Pope Urban IX decides to sanctify it and bless the chapel of the Château in Saint-Julien.
