- "Unique in the world, the refining in barrels of cooked wine from Provence! The Château de St Martin is one of the very rare Provençal estates to continue to produce, in the old-fashioned way, the famous “Cooked wine”.
- Made over a wood fire in a large copper cauldron, it will ferment for several years in French oak barrels.
- Once the barrels have been emptied, a selection of molasses rum is carefully poured in, from Panama, Trinidad & Tobago and the Caribbean.
- After having assembled them by the master of Chais en Provence, we carry out this refining in barrels of cooked wine from Provence which brings roundness, opulence and fruitiness (candied fruit & toasted almond) as well as a brioche finish, persistent and original, with lots of character."
