- "Don Papa rum originates from the island of Négros in the Philippines where it is made from local molasses, renowned for its sweetness and richness. For those who don't know, if the Philippines is today one of the 10 largest sugar cane producing countries in the world, rum production only began there 150 years ago, only to be temporarily interrupted during prohibition. Don Papa rum is produced from the best canes in the archipelago.
- The molasses used in the manufacturing process of this rum is fermented before being column distilled. This Filipino rum is aged at the foot of the Kanlaon volcano in old American oak barrels that contained Bourbon.
- It is during this process that Don Papa 7 year old rum achieves the fruity aromas characterized by its persistent citrus notes. This 7 year old is part of a candied and pastry register.
- The nose of this rum is expressed in very fruity aromas, notably dominated by mandarin and balanced by notes of apricot, raspberry and green banana. Then, more subtle notes of vanilla and cinnamon are added to the mix.
- The mouth of this rum reveals itself with softness and roundness. A mouth that is very delicious, like a fruit cake (orange zest, candied ginger and sweet spices).
- The finish of this rum has a good length, dominated by apricot and punctuated with orange zest and cinnamon."
