"Although thyme is not a rare honeydew in Provence - plants growing in large quantities on limestone and rocky soils, particularly scrubland - it is very difficult to harvest pure honey. To provide abundant nectar, the plants of thyme need warm weather without mistral preceded by sufficient rain. Otherwise, the bee picking is too often mixed with Miel de Provence (a honey from all flowers).
  
Like the plant, thyme, honey is used against respiratory diseases. It is also believed to have antiseptic properties : At Limoges University Hospital, it is the main honey for wound healing.
