- "Located four kilometers from Aix-en-Provence in the commune of Meyreuil, a former bastide of the Grands Carmes d'Aix, Château Simone has been owned by the Rougier family since 1830.
- Château Simone is the best known of the four estates of the Palette appellation of controlled origin. It is one of the most important in the Provençal terroir.
- The estate has been owned by Jean Rougier since 1830. At the same time, poet, musician, he is also a great wine connoisseur.
- The generations that have followed one another have all worked to make Château Simone famous, today considered by wine lovers to be the most famous in Provence. The third generation completely rebuilt the vineyard decimated by the phylloxera crisis at the end of the 19th century.
- Jean Rougier, representing the fourth generation, asked in 1947 to give his wine the appellation of controlled origin and chose to obtain the Palette appellation, that is to say its own controlled designation of origin Château Simone and has managed to raise the estate among the jewels of the Provençal terroir.
- René and Jean-François, respectively sixth and seventh generation of the family, work to perpetuate this demand for quality and know-how that have made the reputation of the estate.
- Harvest carried out exclusively by hand, at full maturity, with sorting of the grapes.
- Conservation & aging in small oak tuns for 18 months, including 6 months on fine lees, aging in barrels for one year before bottling.
- The nose, pleasant, presents subtle, complex and floral aromas. This bouquet is of a beautiful intensity with notes of lime blossom, acacia, vine peach, honey and vanilla.
- On the palate, fleshy, full, round and with a beautiful seductive balance, we find the floral and slightly toasted side.
- Beautiful persistence with a pleasant and fresh finish."
