- "Halfway between the foot of the Alps and the Mediterranean, the Domaine des Sarrins nestles in the hills of the Haut Var, near Lorgues, in a small village called Saint Antonin du Var. It extends over a hundred hectares of pine, oak and olive groves, surrounding islets of vines where the hilly terrain allows. In total, 27 hectares of vines are cultivated, producing wines bearing the AOP Côte de Provence or Vin de Pays du Var.
- The Domaine des Sarrins takes its name from the contraction of the word "Saracens". For centuries, the latter occupied the Massif des Maures from where they launched raids into the hinterland. In the 11th century, during one of these pillages, resistance having been organized, a Saracen leader was wounded in Draguignan. While trying to reach the Massif des Maures he succumbed at this place where a small tower stood. He was there, they say, buried dressed in his golden armor…
- Over the centuries, near this Saracen tower that became a country fortified town, with a precious spring, an estate was built, with many trades: from olive groves to livestock farming, including various crops including silkworms and of course…. vines.
- From the end of the 19th century and the war of 14-18, the rural exodus considerably weakened the countryside, and the estate, then, shrank.
- In 1995, the Paillard family bought it, and through patient work, over the years, breathed new life into it.
- Grape varieties harvested by hand on 2 hectares of old vines from the 60s and 70s.
- The grapes, harvested by hand, are destemmed before being placed in thermo-regulated stainless steel vats. During maceration, daily pumping over is carried out. This lasts 2 weeks before the devatting where only the free-run wine is kept and put into barrels.
- The aging is 24 months in these French oak barrels. Then the blending in stainless steel vats and a rest before bottling.
- On the nose, the aromas are complex, mixing black fruits with notes of leather, spices and scrubland (pine, rosemary, thyme, etc.).
- On the palate, the wine is harmonious and structured. The silky tannins are already well blended.
- The roundness of the wine and the notes of red/black fruits give way to a beautiful length in the mouth with spicy nuances."
