"Located in Flassans-sur-Issole, between Le Luc-en-Provence and Brignoles, Peyrassol is a former Templar commandery founded in the 13th century.
 
 
Following the dissolution of the Templar Order during the famous trial initiated by King Philip the Fair, the estate was entrusted to the Knights Hospitaller of Saint John.
 
 
It was not until 1789, with the confiscation of Church properties by the French State, that the estate changed hands.
 
 
The Ricard family acquired the land in 1790 during the sale of national assets, before transferring ownership to the Rigord family in 1830. The estate remained in the Rigord family for generations until 1967, when Dr. Rigord and his wife Françoise inherited it. At that time, rosé had yet to gain its current prominence, but Françoise Rigord—known as “the lady of Peyrassol”—played a key role in establishing the reputation of the young Côtes de Provence appellation.
 
 
However, significant investment was needed, both in the vineyard and the estate buildings, to meet the estate’s quality ambitions. In 2001, Françoise Rigord made the decision to sell to Philippe Austruy, a passionate wine lover dedicated to excellence and respectful of the estate’s rich heritage.
 
 
A new chapter then began for the Commanderie de Peyrassol and Château Peyrassol vineyard, driven by a deep appreciation for its landscape and history.
 
 
Today, the estate spans nearly 950 hectares, including 100 hectares of vineyards and 350 hectares of parkland. It is one of the largest estates in the region.
 
 
Harvesting is done by hand, with careful parcel selection from 20-year-old vines.
 
 
The wine is aged for 8 months on fine lees in oak barrels.
 
 
This white wine reveals floral aromas with hints of spice and honey.
 
 
The palate is smooth and expressive, echoing the aromatic profile of the nose. A lively, structured acidity brings freshness and gives the wine excellent ageing potential.
