- "Maison Bruno Paillard is a young independent House (created in 1981 in Reims), born from the desire of its founder to create a wine very different from others, combining elegance with complexity.
- The vineyard covers approximately 25 hectares, 12 of which are Grands Crus. Today, this vineyard provides more than half of the House’s supplies.
- The Bruno Paillard style has strong commitments: sustainable and expressive viticulture, high quality standards, with only the first presses, and an aging period 2 to 4 times longer than the minimum required by the appellation. The House only produces extra brut in order to respect the original purity of the wines.
- Made exclusively from the Chardonnay grape variety, this wine is the “lace” of Champagne. This is how it was once nicknamed because of its fine and persistent white foam.
- A very old vinification method called “Demi-Mousse”: fermentation in the bottle is less powerful than for a classic champagne, in order to obtain less effervescence.
- A long aging in the cellar takes place, 4 years on lees followed by a rest of at least 10 months after disgorging. The dosage is Extra-Brut, at 4.5g/L.
- The first aromas are clearly citrus – lime, grapefruit – enhanced with white flowers. Allowed to breathe, hints of almond and bread crust emerge.
- The attack is lively, and produces complex sensations of freshness combining citrus fruits with white-fleshed fruits, evolving with aeration. The chalk is even more sensitive here than in the other vintages. Almost saline-iodine notes.
- Fresh and long, persistent finish. Very salivating wine."
