- "Located four kilometers from Aix-en-Provence in the commune of Meyreuil, a former bastide of the Grands Carmes d'Aix, Château Simone has been owned by the Rougier family since 1830.
- Château Simone is the best known of the four estates of the Palette appellation of controlled origin. It is one of the most important in the Provençal terroir.
- The estate has been owned by Jean Rougier since 1830. At the same time, poet, musician, he is also a great connoisseur of wines.
- The generations that have followed one another have all worked to make Château Simone famous, today considered by wine lovers to be the most famous in Provence. The third generation completely reconstituted the vineyard decimated by the phylloxera crisis at the end of the 19th century.

- René and Jean-François, respectively sixth and seventh generation of the family, work to perpetuate this demand for quality and know-how that have made the reputation of the estate.
- Harvests carried out exclusively by hand, at full maturity. Sorting of grapes in the vineyard and in the cellar.
- Conservation & maturing exclusively in wood, in small oak tuns. Maintained on fine lees and natural decantation by racking. It is capable of aging 10 years which is atypical for a rosé from Provence.
- The nose reveals a ripe and complex fruitiness, race also emerges. Aromas of prune, resin, cinnamon, truffle and spices form a whole completed by fine woody notes.
- The mouth is supple in attack, harmonious it reveals roundness and elegance in evolution.
- The tannins are silky, the balance between alcohol, fruit, and matter is pleasant."
