- "Located four kilometers from Aix-en-Provence in the town of Meyreuil, former bastide of the Grands Carmes d'Aix, Château Simone has been owned by the Rougier family since 1830.
- Château Simone is the best known of the four estates of the Palette controlled designation of origin. It is among the most important in Provence.
- The estate has been owned by Jean Rougier since 1830. A poet and musician, he is also a great wine connoisseur.
- The successive generations have all worked to build the reputation of Château Simone, considered today by enthusiasts to be the most famous in Provence. The third generation completely reconstituted the vineyard decimated by the phylloxera crisis at the end of the 19th century.
- Jean Rougier, representing the fourth generation, asked in 1947 to give his wine the controlled designation of origin and chose to obtain the Palette designation, that is to say his own controlled designation of origin Château Simone and knew raise the estate among the jewels of the Provençal terroir.
- René and Jean-François, respectively the sixth and seventh generation of the family, work to perpetuate this demand for quality and this know-how which makes the reputation of the estate.
- Harvest carried out exclusively by hand, at full maturity, with sorting of the grapes.
- Conservation & aging in small oak barrels for 18 months, including 6 months on fine lees, aging in barrels for one year before bottling.
- The pleasant nose presents subtle, complex and floral aromas. This bouquet has a beautiful intensity with notes of linden, acacia, vine peach, honey and vanilla.
- On the palate, fleshy, full, round and with a beautiful, seductive balance, we find the floral and slightly toasted side.
- Beautiful persistence with a pleasant and fresh finish."
