  • "Located in Flassans-sur-Issole, between Le Luc en Provence and Brignoles, Peyrassol is a former Templar commandery founded in the 13th century.
  • After the disappearance of the Templars during the famous trial ordered by Philip the Fair, the Hospitallers of Saint John were entrusted with the estate.
  • It was not until 1789 and the confiscation of the Church's property by the State that the property changed hands.
  • The Ricard family bought the land during the sale of national property in 1790.
  • The Ricard family sold the estate to the Rigord family in 1830. From generation to generation, the Rigord family passed the estate down until 1967. It was then that Doctor Rigord and his wife Françoise inherited it. The time for rosé had not yet come, but Françoise Rigord, "the lady of Peyrassol", contributed with talent to establishing the reputation of the very young appellation Côtes-de-Provence.
  • However, the estate needs heavy investment, both in the Château Peyrassol vineyard and the buildings, to live up to its qualitative ambitions. Françoise Rigord decides to sell it in 2001 to a wine lover, in love with perfection and respectful of the memories that inhabit these places full of history, Philippe Austruy.
  • A new era then opens for the Commanderie de Peyrassol and the Château Peyrassol vineyard, led by the new owner who experiences a real love at first sight for its landscapes, its history.
  • The wine estate extends over nearly 950 hectares, including 100 hectares dedicated to the cultivation of vines and 350 hectares of park reserved for hunting. It is one of the most important estates in the region.
  • In-depth plot selection, manual harvest on the oldest plots.
  • Vinification: careful preparation of juices, traditional vinification in stainless steel vats.
  • Maturation: As soon as fermentation is finished, a light racking in clear allows to keep only the best of the lees which are then worked carefully to promote both the aromatic expression and the potential of the aromas to hold over time.
  • The nose is fine and elegant. Complex, it releases aromas of white-fleshed fruits, citrus fruits and white flowers for a long time.
  • The palate is cold, fine, silky, it is at the same time tender, delicate and lively.
  • The freshness of the finish supports a measured volume and a hint of salinity."
