"Château La Calisse is located in Pontevès, in the Haut-Var region of Provence, east of Aix. A determined young woman, Patricia Ortelli took over the estate 30 years ago. She was the first producer to claim organic certification.
  
The estate previously raised silkworms and produced almonds that supplied the confectioners of Aix-en-Provence to make the famous calisson, a Provençal sweet made with almonds and candied melon."
