- "Halfway between the feet of the Alps and the Mediterranean, the Domaine des Sarrins is nestled in the hills of Haut Var, near Lorgues, in a small village called Saint Antonin du Var. It extends over around a hundred hectares of pine, oak, or olive groves, surrounding islets of vines where the hilly terrain allows. In all, 27 hectares of vines are cultivated, producing wines bearing the AOP Côte de Provence or Vin de Pays du Var.
- The Domaine des Sarrins takes its name from the contraction of the word “Sarrasins”. The latter occupied the Maures massif for centuries from where they launched raids into the hinterland. In the 11th century, during one of these pillages, resistance having been organized, a Sarrazin chief was injured in Draguignan. While trying to reach the Maures massif he succumbed at this place where a small tower stood. It is said that he was buried there wearing his golden armor...
- Over the centuries, near this Sarrazin tower which became a country bastide, endowed with a precious spring, an estate was built, with numerous trades: from olive groves to livestock breeding, including various crops including that of silkworm and of course…. of the vine.
- From the end of the 19th century and the war of 1914-18, the rural exodus considerably weakened the countryside, and the area then shrank.
- In 1995, the Paillard family bought it, and through patient work, over the years, breathed new life into it.
- For this rosé, the juice yield is limited to 60%, in order to keep only the purest, and obtain a very light, shiny pink hue. Inerting the juices at all stages to avoid any oxidation and protect the most delicate aromas, reducing doses of sulfur to the strict minimum.
- Vinification in stainless steel vats at moderate temperature.
- The nose is fine and intense. It presents floral aromas (violet, lily of the valley) and white fruits (peach) with notes of sweet almond.
- In the mouth, the attack is supple. We find the finesse of the nose, fresh and harmonious and its floral aromas, as well as a beautiful substance in balance with the freshness.
- The finish is persistent with notes of violet."
