The vinification and the aging are in the same spirit, that is to say with maximum respect for the terroirs.
  • Harvest: Manual in 20 kg perforated crates.
  • Aging: All Santenay St Jean production is put into one or two year old barrels for 12 months. All barrels are assembled for bottling.
  • Food and Wine Pairing: A great match with grilled fish or grilled scallops."
