- "With more than 70 Burgundy wine appellations, Domaine Vincent Girardin has built a reputation for excellence. Founded in 1980 in Santenay, the estate has gradually expanded across the finest appellations of the Côte de Beaune. Now based in Meursault, it has developed a significant business as a wine merchant and winemaker. This allows it to offer no fewer than seven Grands Crus and around thirty Premiers Crus of Burgundy.
- Domaine Vincent Girardin has 30 hectares of vineyards in the Côte de Beaune. These Chardonnay and Pinot Noir vines are spread across nine villages. The historic heart of the estate is located in Santenay and Meursault. Its vineyards also extend to Puligny-Montrachet, Chassagne-Montrachet, Saint-Aubin, Volnay, and Pommard. In the northern Côte de Beaune, the estate has vineyards in Savigny-Lès-Beaune and Aloxe-Corton.
- Hand-harvested, sorted on the vine, then in the winery, and finally pressed (pneumatic press) to achieve a slow extraction.
- The grape must is transferred to French oak barrels (10% new) where alcoholic and malolactic fermentation will take place using indigenous yeasts. Aging will take place on fine lees for 15 months. No stirring. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. Racking is carried out before fining and light filtration before bottling. Bottling is carried out according to the lunar calendar.
- On the palate, it is fruity, with lively, round fruit, rich and long: all the freshness and polish of marble.
