- "With over 70 Burgundy appellations, Domaine Vincent Girardin has earned a reputation for excellence. Founded in 1980 in Santenay, the estate gradually expanded across the finest Côte de Beaune appellations. Now based in Meursault, it operates a significant négociant-éleveur activity, offering seven Grand Crus and around thirty Premier Crus.
- The estate manages 30 hectares of vineyards in the Côte de Beaune, planted with Chardonnay and Pinot Noir across nine villages. The historic heart of the domaine is Santenay and Meursault, with additional holdings in Puligny-Montrachet, Chassagne-Montrachet, Saint-Aubin, Volnay, Pommard, Savigny-lès-Beaune, and Aloxe-Corton.
- Harvest : hand-picked grapes, sorted in the vineyard and again at the winery
- Vinification : slow extraction with a pneumatic press. The must is transferred to French oak barrels (15% new) for alcoholic and malolactic fermentation with native yeasts and bacteria.
- Ageing : long 15-month maturation on fine lees, without batonnage. One month prior to bottling, wines from different barrels are blended in stainless steel tanks, followed by light fining and gentle filtration. Bottling is performed according to the lunar calendar.
- Nose : very refined, with bright citrus aromas.
- Palate : pronounced minerality and vibrant acidity, indicating excellent aging potential."
