- Since May 2019, Antoine Lepetit de la Bigne, a specialist in biodynamic viticulture, has joined the estate as Technical Director.
- Winemaking : The grapes are hand-harvested in small crates, sorted on a sorting table, and 100% destemmed. Whole berries are then transferred directly into tanks to preserve the integrity of the fruit.
- Fermentation follows traditional Burgundian methods in temperature-controlled open vats.
- Aging : The wine is aged for 15 months in Burgundian oak barrels, including 30% new oak."
