- A rigorous work in respect of the vine, an organic approach, a real limitation of the use of chemical products have allowed the obtaining of the High Environmental Value label in 2016. This H.V.E. label validates the approach of the Domaine in respect of biodiversity and the restriction of the use of phytosanitary products and fertilizers. It is a guarantee of the good ecological health of the grapes essential to the quality of true Terroir Wines. The vinification and the aging are in the same spirit, that is to say with maximum respect for the terroirs.
- Aging: 100% in barrels with, depending on the vintage, 20% new barrels and 80% barrels of one or two wines for 12 months. Blending after 12 months of barrels for bottling.
- Food and Wine Pairing: A rather tannic wine to age for 3 to 5 years and which will perfectly accompany game, or a mature cheese."
